    Elouan Pinot Noir is crafted from grapes grown in regions of Oregon. It is celebrated for its ideal conditions for cultivating Pinot Noir, offering diverse flavors and characteristics. The delicate nature of Oregon Pinot Noir requires a meticulous approach in the cellar. The clusters are 100% destemmed, with select lots with small stems added to the fermenter for phenolic augmentation. Grapes then undergo an extended cold soak from five days to two weeks. During fermentation, both punch down and pump over techniques are utilized. This reactive winemaking style is tailored to each lot's needs, ensuring the terroir's optimal expression. The wine undergoes aging for ten months in a mix of new and seasoned French oak barrels. This aging process undergoes complete malolactic fermentation, enhancing the wine's smooth texture and complexity. The ideal food pairings for this wine include French onion soup with a warm baguette slice lightly brushed with olive oil, Italian sausage, and arugula pizza topped with pickled red onions or spicy tortellini with zucchini and tomatoes.
